Antillean Cheese Balls

by admin

This is what they are: the real Antillean cheese balls. Indispensable at a party on Aruba, Bonaire and Curaçao. Cheese balls are just really part of it.

The best thing about this recipe is that you can make the Antillean cheese balls with ingredients that you just buy in the supermarket. Dutch (young) matured cheese, eggs, flour and baking powder, for example. That is the basis of the recipe. After that you can vary endlessly.

For example, add some paprika powder or cayenne pepper for an extra kick… or go for pieces of ham or bacon for a deeper taste experience.

Two secrets for Antillean cheese balls

The recipe for Antillean cheese balls is really very easy. It is therefore a perfect recipe to make with children. I do have two 'secret' tips for you:

1. Grate very finely. Grate your cheese yourself and use the small teeth of the grater. This will allow you to easily knead the grated cheese through the dough and prevent any pieces from sticking out.

2. Press very firmly. You can really apply force while rolling the cheese balls. First press the balls completely flat and then roll them up again until they are perfectly round. If all goes well, the cheese balls now have no cracks and they will bake perfectly round!

This recipe can also be found in our cookbook 'De complete Antilliaanse keuken† Did you know that that book contains no fewer than 300 (!) recipes from the kitchen of Aruba, Bonaire and Curaçao?

It is the result of 7 years of research and we now finally dare to say that we have really “captured” Antillean cuisine in its entirety. Click on the image below to learn more about the book:

In the video below you can see in 45 seconds how I make the Antillean cheese balls:

Preparation Antillean cheese balls

Stir all the dry ingredients for the Antillean cheese balls (wheat flour, baking powder, pepper, salt, paprika and cheese) well. Beat the eggs in a small bowl and add to the cheese mixture. Then knead the whole into a firm dough. If the dough is too dry and falls apart into crumbs, you can add some water.

Then form small balls of the dough, the size of a walnut. Note: the baking powder will cause the dough to expand and the cheese balls will eventually get bigger when you bake them.

Now heat the sunflower oil to about 170 degrees and finally fry the cheese balls in the oil until they are golden yellow. This won't take long (5 minutes max) so stick with it!

Then drain the Antillean cheese balls on kitchen paper and serve while they are still warm. - Enjoy your meal!
