Arepa di pampuna are delicious pumpkin pancakes from Antillean cuisine. You make them with pumpkin, spices and raisins in the batter. And come on, don't you like raisins? Then you can of course omit it. The arepa di pampuna is sometimes called 'respuk' or 'repa di pampuna' named. In Dutch you would of course simply say 'pumpkin pancakes' say.

You can eat these tasty pancakes for breakfast, lunch or snack. Because of their slightly sweet taste, they always fit well. And because it contains a lot of pumpkin, you immediately have the necessary vitamins. It is therefore an ideal dish for (difficult eating) children.

How many arepa di pampuna do you make of this?

This recipe is geared to 4 servings. If you want to eat the arepa di pampuna as a snack, it is enough even for 6 people. How many pancakes you bake from the recipe depends very much on how big you make them. I prefer to bake the pancakes with a tablespoon of batter, so that they are small and handy. In that case you will certainly get about 40 out of it. Do you bake the arepa di pampuna a bit bigger, like a CD? Then you get about 25 out of it.

Ingredients:

  • 2 eggs
  • 500 gram of pumpkin
  • 1 tsp cinnamon powder
  • 100 ml milk (more if necessary)
  • 200 gr flour
  • 1 tablespoon of baking soda
  • 3 tablespoons of sugar
  • 1 tablespoon of vegetable oil
  • a pinch of salt
  • (optional) 50 gr. raisins

For this recipe it is best to use a round orange pumpkin or butternut squash. You can find both pumpkins in the supermarket.

Preparation arepa di pampuna:

Remove the seeds from the pumpkin, peel and cut into small pieces. Then boil the pumpkin in water with a teaspoon of salt and mash the pulp with a fork or grind it with a food processor.



Add the other ingredients to the pumpkin and stir well until a thick batter is formed. Do you like raisins? Then add about 50 grams of raisins to the batter at this time.

The batter for the arepa di pampuna should resemble that of American pancakes, not Dutch pancakes! Is the batter too thick? Then add a little extra milk.

Then heat oil in a pan and fry 3 pancakes (1 large tablespoon of batter each) at a time until they are brown on both sides.

When the arepa di pampuna are eaten on their own, you can sprinkle them with some sugar. - Enjoy your meal!
