Steamed buns with chicken
Steamed buns are really something different than usual. Most bread rolls we know are baked in the oven. They do things differently in Asia. There they sometimes steam their buns, which makes them super soft and has no crust. You may be familiar with the bapao buns or the Chinese lotus buns.
Some steamed buns (like the bapao) are steamed with the filling in it. These buns – you also call them 'goa bao' or 'bao buns' – are not. This allows you to cover them with something you like after steaming. Stew, fried chicken or fish… or a vegetarian filling of tofu or seitan, for example.
In this recipe we go for a real 'East meets West fusion'. We fill the bao buns with fried chicken. For the latter, it is best to use thigh fillet. Or, of course, chicken fillet. As long as there's no bone in it, of course...
This recipe makes about 15 steamed broodles. Do you need more or less? Then you can easily halve or double the recipe. The buns and chicken are best eaten after baking NOT ALLOWED freeze or store.
Ingredients:
- 1x fried chicken according to our recipe (fillet only!)
- 500 gr bapao flour (or regular flour)
- 7 gr/1 sachet dried yeast
- 8 g salt
- 1 tbsp crystal sugar
- 1 tbsp sunflower oil
- 300 ml lukewarm water
- slices of red onion or spring onion, to serve

Preparation steamed buns with chicken:
Start by making the dough for the buns. To do this, mix the (bapao) flour with the yeast, salt, sugar, oil and water to a smooth dough. Knead the dough well for at least 10 minutes and then shape it into a ball. Place the dough in a greased bowl and cover with plastic wrap or a wet tea towel. Let the dough rise for at least an hour, until it has doubled in volume.
Then divide the dough into 15 pieces. Make balls of this and roll them out into an oval of about 7 mm thick. Brush the piece of dough with some oil. Now take a chopstick and place it in the middle of the dough and fold the dough in half. Then remove the chopstick.
Place each bao bun in a cupcake wrapper. You can also use a piece of parchment paper for this. Let the buns rise in this way for another hour.
Meanwhile, create the fried chicken according to our recipe and then keep it warm in the oven at 100 degrees.
Now put a pan on the fire with a good layer of water in it. When it boils, place a steamer basket in it. Place the buns in the steamer basket and steam them for about 10-12 minutes. Then open them and serve them hot with the chicken, some red onion or spring onion and your favorite sauce. Enjoy your meal!
