Chicken patties (with puff pastry)
Nothing beats homemade chicken patties. You can make that on the Antillean way, but this version with chicken fillet and vegetables in puff pastry is also irresistibly delicious… and a lot quicker to make!
This recipe makes 30 small patties. You make this from half a slice of puff pastry with a generous tablespoon of the filling on top. You can of course also choose to make larger chicken patties. In that case you use 15 whole slices of puff pastry. Just whatever you fancy, of course. In both cases the baking time remains approximately 20 minutes.
Ingredients:
- 3 chicken breasts
- 1 liter stock (chicken)
- 10 allspice grains
- 2 bay leaves
For the filling
- 1 onion, chopped
- 2 cloves of garlic, pressed
- 1 mme. Jeanette pepper (to taste!)
- a small bunch of celery, finely chopped
- 2 carrots, in small cubes
- 100 gr peas (frozen)
- 2 tbsp sunflower oil
- 2 tl paprika
- 2 tsp masala
- 2 tbsp Chinese 'dark soy sauce'
(or use ketjap Manis) - 2 tl tomato puree
- salt and pepper to taste
And further…
- 15 slices of puff pastry
- 1 egg, jammed
- sesame seeds, for sprinkling
Preparation of chicken patties with puff pastry
Boil the chicken fillets for 20 minutes in the stock (you can use a cube) with the allspice grains and bay leaves. Then pull the meat apart into strings with 2 forks and set aside.
Now cut all the vegetables and fry them briefly in the sunflower oil. After 5 minutes, add the chicken and season the filling with paprika powder, masala, soy sauce, tomato puree and salt & pepper to taste. Fry for another 5 minutes on low heat and then let it cool to room temperature.
Let the puff pastry thaw and cut each slice in half. Place a tablespoon of the filling on the dough, fold it in half and seal the edges with a fork.
Now preheat the oven to 200°C.
Beat the egg and brush the chicken patties with it. Finally, sprinkle some sesame seeds on top. Bake the patties for 20 minutes until golden and done. Enjoy your meal!
