Rainbow cocktail with Barefoot & Blue Curaçao

In honor of the Pride 2022 I made in collaboration with Barefoot wine this super fun rainbow cocktail. You make it with grenadine syrup, pineapple juice, Pinot Grigio and Blue Curaçao.

To make the rainbow cocktail extra festive, you can of course decorate it with some fresh fruit. This time I chose orange and strawberry, but a slice of lime or a wedge of pineapple would also go well with it.

Barefoot's Pinot Grigio

For this recipe I used the Pinot Grigio from Barefoot. This is a tasty, sparkling white wine that combines well with fruit flavors. By the way, did you know that Barefoot has been a proud 'ally' of the LGBTQ+ community since 1988? And not just in word, but also in deeds.

You can find the Pinot Grigio from Barefoot at Plus, Spar, Coop and Hoogvliet Supermarkets.

This recipe makes 1 rainbow cocktail.

Ingredients:

  • 30 ml grenadine syrup
  • ice cubes, to half fill the glass
  • 90 ml pineapple juice
  • 90ml Pinot Grigio
  • 30 ml water or vodka (depending on how strong you want the cocktail!)
  • 20 ml Blue Curacao
  • A slice of orange and a strawberry, to decorate

Tip: I like having 'hard lines' in my cocktail. It is still something magical to see how these different drinks float so nicely on top of each other. Do you find it more fun to make a 'blended' rainbow, where you also see the intermediate colors (orange and green)? Then stir very gently when you've added half of each new color to mix it with the previous color.

Preparation rainbow cocktail

Take a large wine glass and add the grenadine syrup. Then fill the glass halfway with ice cubes. Now mix the Pinot Grigio with the pineapple juice and pour this on the syrup.

Now it's time for the last layer. To do this, mix the Blue Curaçao with water or vodka (depending on how strong you want the cocktail!) and pour this very carefully over a spoon onto the yellow layer.

Finish the cocktail with a slice of orange and a strawberry and stir everything together before drinking.
