In Jamaica, a special bread is made with coconut milk, butter and eggs: coco bread. It is a delicious, but quite powerful sandwich. Today I'm making my own, lighter version of it. And it's very easy to make too! You can make this 'super fluffy coconut bread' with a fresh one coconut. Mega tasteful!

This recipe is for 8 pieces
- ½ coconut
- 250 ml water
- 1 sachet of yeast
- 3 tbsp sugar
- 1 tsp salt
- 500 gr wheat flour
- 2 tbsp coconut oil
- *optional: a cap of coconut syrup or coconut essence
- extra coconut and lime zest, for sprinkling
Preparation super fluffy coconut bread
Open the coconut and roughly divide the flesh into 2. Put half the coconut in the blender with 250 ml water. Grind this until it is completely smooth.
Then mix the coconut mixture with the yeast, sugar, salt and wheat flour and knead into a smooth dough. You can also add a cap of coconut syrup or coconut essence for extra flavour. By hand this takes about 15 minutes and with a kneading machine about 5 minutes.
Let the dough rise in a warm place for about an hour, until doubled in volume.
Then divide the dough into 8 equal pieces. Make balls of this and roll them out into a circle of about 20 cm in diameter.
Then melt the coconut oil with possibly some coconut syrup or essence.
Spread the dough circles with the coconut oil and fold them in half. Brush them again with the oil and fold them in half again. Finally, sprinkle the buns with grated coconut and lime zest.
Preheat the oven to 200°C while the dough is allowed to rise for another 30 minutes.
Finally, bake the super fluffy coconut bread in 15-18 minutes until done and golden. Enjoy your meal!
TIP: You can top these bread rolls with both sweet and savory fillings. They are delicious with jam or chocolate spread, but also irresistible with bakkeljauw!
