Sweet and sour chicken with pineapple

Sweet and sour chicken with pineapple is a real classic. This 'sweet 'n sour chicken' is a combination of East and West, with influences from China and the United States. The best thing about this recipe? It's so done!

We make the sweet and sour chicken 'from scratch', so without mixes or ready-made products. This recipe is best with fresh pineapple, but if you can't find it (at certain times of the year), you can also use canned pineapple pieces. Make sure you have pineapple in juice and not in syrup, otherwise the dish will be too sweet.



This recipe is for 4 servings of sweet 'n sour chicken.

Ingredients:

  • 500 gr chicken fillet
  • 50 g cornflour
  • oil, for frying
  • 1/2 fresh pineapple
    or a large can of pineapple pieces in juice
  • 5 cm of ginger root
  • 3 cloves garlic
  • 1 tbsp dark soy sauce
    or soy sauce Manis
  • 1 tbsp tomato ketchup
  • a stock cube (chicken)
  • 1 el vinegar
  • 1 tbsp sugar
  • 1/2 tsp chili flakes
  • 1 spring onion, to garnish

Preparation sweet and sour chicken with pineapple

Start by frying the chicken. To do this, cut the chicken breasts into bite-sized pieces and roll them in the cornflour. The idea is that each piece of chicken is completely covered in the cornstarch.

Heat oil over high heat until it is about 160 degrees. Fry the chicken pieces in this for about 5 minutes, until they are golden and cooked through. Meanwhile, cut the pineapple into cubes (if you use fresh pineapple of course!)

Then grate the ginger root and the garlic cloves. Heat another tablespoon of oil in the pan and fry the ginger and garlic for a minute.



Now the pineapple pieces, soy sauce, tomato ketchup, sugar and vinegar can also be added to the pan. You will use this to make the sauce for the sweet and sour chicken. Crumble the stock cube into the dish and add 400 ml water. Let it cook gently for a few minutes.

Remove half of the contents from the pan (so both liquid and pieces of pineapple) and grind them fine in a blender or with an immersion blender. Then pour it back into the pan and now add the chicken.

Let the chicken cook for another two minutes and finally add the chili flakes.

Serve the sweet and sour chicken with rice. After serving, sprinkle the dish with thin rings of the spring onion. - Enjoy your dinner!
