Baklava with a Caribbean twist
One of my favorite desserts is baklava. This sweet dish is eaten in Turkey and Greece. You make it traditionally with filo dough, walnuts (or pistachios), honey and cinnamon. In this version I give the traditional baklava a Caribbean twist. How? With coconut, lime and a spoonful of our 'baking spice' for extra spiciness!

This recipe makes about 20-24 pieces of baklava with a Caribbean twist. Do you need less? Then you can easily halve the recipe!
Ingredients:
- 200 gr unsalted butter
- 300 gr almonds
- 200 gr grated coconut
- 50 gr light caster sugar
- 2 teaspoons Caribbean baking spice*
*(or use cinnamon) - 20 sheets of filo dough
- 250 ml water
- 300 gr sugar
- 120 ml of honey
- the juice of 1 lime (or lemon)

Baklava preparation with a Caribbean twist
Melt the butter. Chop the almonds finely with a knife or use a food chopper. Mix the chopped almonds with the grated coconut, caster sugar and cinnamon. Reserve a little of this mixture to garnish the baklava.
Now preheat the oven to 175°C and grease a baking tin (20x28cm) with butter. Cut the sheets phyllo dough tailor-made for the baking pan.
Now place a sheet of filo pastry on the bottom of the baking tin and brush it with a layer of butter. Place another sheet on top and repeat until one third of the filo pastry is used up. Divide half of the nut mixture over it and place another sheet of filo pastry on top. Grease the filo sheet with butter and place another sheet on top. Continue until two-thirds of the dough is used up.
Now divide the second half of the nut mixture over the baking tin and finish the baklava with the remaining phyllo dough. (always smear with a little butter before you put a sheet on top. Then cut diamonds in the baklava.
Place the baklava in the oven for 35 minutes until the top is golden brown and crispy.
Meanwhile, heat the water with the sugar, honey and lime juice in a saucepan and stir until all the sugar has dissolved. Let the mixture boil for a few minutes, until it has thickened slightly.
Then remove the baklava from the oven and pour the syrup over the baklava while it is still hot and sprinkle with the rest of the nut mixture. Let the whole thing cool down to room temperature. Enjoy your dinner!
