We can make recipes as difficult as we want, but often the simplest things are the tastiest. Like these hot wings – deliciously crispy chicken wings with a strong kick! You can buy these spicy wings in many restaurants and takeaways, but homemade is always the best.

To make these spicy hot wings we use unmarinated chicken wings. They are first given a layer of spices, a so-called 'dry rub'. Then they are baked in the oven. Finally, a layer of homemade hot sauce is added and Kees is ready!

We use cayenne pepper and chili pepper in this recipe. They give the hot wings spice, but not excessive heat. Would you prefer the chicken wings a little less spicy? Then use half of the indicated amount. And do you want them extra hot? Then you can use Madame Jeanette pepper instead of the chili.

This recipe makes 6 servings of hot wings. Do you need more or less? You can easily halve or double the recipe.

Ingredients:

  • 1 Kg chicken wings, halved at the joint
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • ½ tsp mustard powder
  • 1 tl paprika
  • 1 level tsp salt
  • 2 tsp sugar
  • ½ tsp ginger powder
  • 1 tbsp sunflower oil

For the hot sauce

  • 2 tbsp apple or wine vinegar
  • 2 tsp smoked paprika
  • 1 tbsp Worcestershire sauce
  • 1 chili pepper, finely chopped
  • 1 tbsp tomato ketchup
  • 2 tbsp honey
  • a pinch of ground cloves
  • salt and pepper to taste

Preparation of the hot wings

Mix the spices for the 'rub' together in a bowl. Finally add the sunflower oil. Now place the chicken wings in the dish and mix well. You can rub the chicken wings well with the 'rub'.

Then cover the dish and let the chicken wings marinate in the refrigerator for at least 2 hours. (If you are short on time, you can skip the marinating step.)

Then preheat the oven to 200°C and line a baking tray with baking paper. Place the chicken wings on the baking tray and bake for about 30 minutes, until almost cooked through.

Meanwhile, make the sauce for the hot wings. You do this by mixing all the ingredients from the second list together in a bowl. If necessary, make the sauce more liquid with a tablespoon of water.

Remove the baking tray from the oven and brush all the chicken wings with a little of the hot sauce. Then put the baking tray back and bake the hot wings for another 15 minutes, until they are cooked through and crispy. The sauce has now formed a hard layer on the chicken wings.

Tip: You can also brush the hot wings with the sauce twice and put them back in the oven. This makes the coating even crispier and more flavorful. – Enjoy your meal!
