Breaded sardines
Sardines are delicious little fish. They are best if they are breaded. Most people only know sardines from cans. They are then eaten 'normally, like that' or briefly fried in a pan. But have you ever had fresh sardines?
You can buy the sardines from the fishmonger when they are in season. The small fish are easy to clean and removing the bone from the sardines is also surprisingly easy. You don't even need any tools for it!
For this recipe we use whole, fresh sardines. We open these at the bottom. We leave the fish on the top whole, so that you get a 'butterfly' effect. This makes the fillets appear twice as large and easy to handle.
This recipe makes 12 breaded sardines, which is enough for 4 servings.

Ingredients:
- 12 fresh sardines
- 100 gr wheat flour
- 1 egg, jammed
- 100 gr breadcrumbs
- 1 tsp salt
- 1 tl paprika
- 1/2 tsp black pepper
- 1 tsp dried parsley
- oil, for frying
Preparation of the breaded sardines
Start by cleaning the sardines. To do this, cut the bottom open so that you can remove the entrails from the fish. Also remove the heads from the sardines, but leave the tails on.
Now cut the fish all the way through at the bottom, so that you can flip the fillets up. Finally, remove the backbone. This is easiest if you grab it on half of the sardines between your thumb and forefinger. Carefully pull the bone out of the fish, holding back the meat with the other hand. A bit like zipping thyme or rosemary leaves from a sprig!
Place the sardine fillets on a plate and then proceed to make the crust. Prepare 3 bowls for this: one with wheat flour, one with the beaten egg and one with a mixture of breadcrumbs, salt, pepper, paprika and parsley.
Dip the sardines first in the flour and then in the egg. Finally, place them in the breadcrumbs dish and press them down well on both sides, so that the whole fish is covered with a layer of the breadcrumbs. Then place the sardines on a plate for a while, until it is time to fry them.
To fry the sardines, heat oil in a large frying pan. A layer of about 2 cm is enough. Slide the sardines into the oil one at a time and fry them in this way for about 3-4 minutes until golden brown and cooked through.
Serve the sardines with a tasty sauce, a salsa with tomatoes or 'just' with a little lemon juice and salt. - Enjoy your dinner!
