Spicy stew with coconut and peanut

When it's cold outside, few things taste better than buttery braised meat. And not only is it tasty, but because of the long stewing, the whole house immediately smells delicious! This spicy pulled pork is made with coconut milk, peanuts and lots of spices.

We think it's the perfect 'companion' for crispy fries at home, but this spicy stew is also a treat with rice or boiled potatoes! By the way, you can easily double or halve the recipe… which is handy when you cook for larger or smaller groups.

The recipe for spicy stew

I like to make this recipe the 'old fashioned' way... nice and slow in a cast iron pan for hours. But if you are short on time, you can also use a pressure cooker for this stew. In that case, the stew will be ready in an hour. On the other hand, it is also very suitable for preparation in a slow cooker. In that case, you put the meat and the other ingredients in the pan in the morning and leave it until the evening.

This recipe is for 4 servings

Ingredients:

  • 750 gr beef ribs
  • 2 tbsp sunflower oil
  • 2 onions, chopped
  • 3 cloves garlic
  • a piece of ginger (about 3 cm)
  • 1 tbsp curry / masala
  • 2 tsp (smoked) paprika powder
  • a can (70 gr) tomato paste
  • 1 chili pepper, chopped
  • 250 ml coconut milk
  • 3 tablespoons of peanut butter
  • 3 tbsp soy sauce (Chinese 'dark soy sauce' or possibly ketjap manis)
  • salt and pepper to taste

Preparation spicy stew with coconut and peanut

Cut the meat into cubes of about 3×3 cm. Sprinkle them with salt and pepper. Then heat some oil in a frying pan and fry the meat briefly until the outside turns brown.

Then add the onion and garlic pieces and lower the heat. Fry everything together until the onion is translucent. Grate the ginger and add it to the meat. Go through everything again.



Now add the curry, paprika and hot pepper. Pour the coconut milk and soy sauce into the pan and add the contents of the can of tomato paste.

Let the meat simmer very gently for a few hours with the lid on the pan. I think the result is fine after two hours, but if you want really tender pulled pork, you can simmer the meat for 3 to 4 hours. Make sure that there is enough moisture in the pan, so that the stew does not boil dry!

After this simmering time, you can add the peanut butter to thicken the sauce and give it extra flavor. Serve the stew with rice, fries or boiled potatoes. Enjoy your dinner!
