Vegan fried chicken from fried oyster mushrooms
These crispy fried oyster mushrooms are the perfect vegan alternative to KFC chicken. You could therefore also call them 'vegan fried chicken'. But whatever you call them… they are delicious! A nicely spiced crunchy layer, firm oyster mushrooms with that tasty umami taste and therefore 100% vegetable.
I always season this 'vegan fried chicken' with paprika powder, garlic powder and onion powder. Add a little cayenne pepper to make it tasty spicy is becoming. Of course you can vary this to your heart's content. A version with only a tablespoon of masala (and of course some salt) through the batter is also very tasty!
Why not call it fried oyster mushrooms?
I'll tell you! It has everything to do with the SEO. In other words, how well something can be found in Google. A lot of people search for the term 'vegan fried chicken'. If I then give the recipe a funny title like 'super dushi oyster mushroom feast', no one will see it. So yes, of course I also know that 'vegan fried chicken' is not a scientific name for these tasty fried oyster mushrooms. But I enjoy using it anyway!

This recipe is for 4 servings of vegan fried chicken.
Ingredients:
- 250 gr oyster mushrooms
- sunflower oil or frying oil, for frying
For the batter
- 100 gr wheat flour
- 1 tsp garlic powder
- 1 tsp onion powder
- a level tsp of salt
- 2 tsp sugar
- 250 gr vegetable milk (e.g. soya)
To bread
- 100 gr wheat flour
- ½ tsp garlic powder
- 1 tl paprika
- ½ tsp cayenne pepper
- ½ tsp thyme
- salt and pepper to taste

Preparation 'vegan fried chicken'
Make sure that the oyster mushrooms are clean and dry. Tear any large ones into smaller pieces.
Then take two bowls and mix all the ingredients for the batter in the first bowl. Put the wheat flour in the bowl, then add garlic powder, onion powder, salt and sugar. Pour over the vegetable milk and mix the whole into a liquid batter.
In the other bowl, mix all the ingredients you need to bread the vegan fried chicken. So the wheat flour, garlic powder, paprika powder, cayenne pepper, thyme and salt and pepper to taste.
Then heat the oil to 170 degrees. This is best done in a deep fryer, but can also be done by putting a small pan or wok on the fire. In the latter case, a separate thermometer is useful!
Dip each piece of oyster mushroom first in the batter, then roll them through the dry mixture. Then immediately slide them into the hot oil and fry them for 3-5 minutes until golden and golden. Serve the 'vegan fried chicken' with just some salt and lemon or with your favorite sauce – Enjoy your meal!
