American Biscuits & Gravy
Another classic from American soul food cuisine: biscuits and gravy. And if you only speak British English, you would almost think this is about biscuits and gravy. But nothing could be further from the truth... you make this dish with super fluffy American biscuits that are covered with a soft, white sausage-based sauce.
Americans eat the biscuits & gravy quietly for their breakfast, but I would rather eat it for lunch. Or even for dinner, if you serve it with a nice salad.
This recipe makes 4-6 portions of biscuits & gravy, depending on how hungry you are.
Ingredients:
For the biscuits
- 375 gr flour
- 120 g butter, chilled.
- 1 tsp salt
- 1 tbsp sugar
- 1 sachet of baking powder
- 1 tsp baking soda
- 225 ml buttermilk
For the gravy
- 3 bratwursts
- 30 gr butter
- 30 gr flour
- 350 ml milk
- ½ tsp paprika
- ½ tsp garlic powder
- salt & pepper to taste
Preparation of biscuits & gravy
Start by making the biscuits. Preheat the oven to 200°C and mix the flour with the salt, sugar, baking powder, soda and cold butter. You will now get coarse crumbs.
Add the buttermilk to make a dough. We will knead the dough well and then roll it out.
Now sprinkle the dough with flour and fold it into quarters. Unroll it again. Sprinkle with flour again and roll it out a third time to about 1cm thick. Cut out rounds and place them on a baking tray.
Spread the biscuits with melted butter and bake them in the oven at 15°C for 200 minutes.
In the meantime, make the gravy. Remove the meat from the sausages and discard the intestines. Brown the meat and then add the butter and flour.
Boil the flour briefly and then pour the milk into the pan. Stir until you have a thick sauce. Is the sauce too thick? Then add some extra milk.
Season the gravy with paprika powder, garlic powder and salt and pepper to taste. Serve the biscuits (halved) with some of the gravy on top. Enjoy your meal!
