Boba/Bubble tea
Bubble tea or Boba is all the rage! The popular drink from Asia is increasingly on the menu at restaurants and lunchrooms. It is a nice sweet tea with milk and tapioca pearls. Have you ever drunk bubble tea? And better yet… have you ever made it yourself?
What is bubble tea?
Bubble tea is a sweet tea with ice cubes and milk. In addition, a different flavor (for example fruit) is often added. The most characteristic of this drink is that there is a layer of tapioca pearls at the bottom of the cup. You can eat these by gently sucking them up with a wide straw.
Children in particular are crazy about this drink that originally comes from Taiwan. Logical, of course, because the tapioca pearls in it look just like sweets. They are nice and chewy and most resemble wine gums that are less sweet than normal. You can easily make bubble tea (also called Boba) yourself with our recipe.
Make your own bubble tea
This recipe makes a standard bubble tea or 'boba'. You can of course vary endlessly with the flavors. Just like with the popular shops, add pureed fruit or a tasty syrup. An ingredient such as sweet condensed milk also works very well in the boba. Just what you like best!
This recipe is for one large glass. Do you need more? Then you can easily double the recipe.
Ingredients:
For the tapioca pearls
- 1 L water
- a handful of tapioca pearls*
*quick-cooking pearls are the best to work with!
Vabout the syrup
- 50 g brown sugar
- 30 ml water
And further…
- 150 ml strong black tea
- 100 ml (vegetable) milk
- 5 ice cubes
- fruit or syrup of your choice

Preparation of bubble tea
First make the syrup by boiling the brown sugar with the water. When the sugar crystals have dissolved, the syrup is ready. This usually takes about 2 minutes.
Then brew a cup of strong black tea. It is best to use two tea bags for this. Let the tea cool. Now proceed to make the 'bubbles'.
To do this, put the tapioca pearls in a pan with the water and bring to the boil. Let the pearls cook until they are tender. This usually takes about 10-30 minutes, depending on the variety.
The pearls are done when they are transparent and therefore no longer have a white core. You will always find the correct cooking time for your tapioca pearls on the packaging! After cooking, rinse the pearls with cold water and place them in the syrup you made earlier.
Now it's time to assemble the drink. Take a large glass and put the ice cubes in it. Pour over the black tea and then add the tapioca pearls and syrup. Finish the bubble tea with some (vegetable) milk. Enjoy your drink!
