No bake cake with Boer'nyogurt Licor 43

Recently I was asked by De Zuivelhoeve if I wanted to make a tasty and easy dessert with their new taste Farmer's yogurt Licor 43† And really, how delicious is that! Full, creamy yogurt with the taste of Licor 43. Simply heavenly! Since it had to be 'easy', I immediately knew what I was going to make: this no bake cake that you can put on the table with little effort and in no time.

For this recipe I use the ultimate 'shortcuts' when it comes to cake: a crust of biscuit crumbs and cocoa and a thick layer of Boer'n yoghurt that we let stiffen with gelatin. Fresh fruit on top and it's also very festive. Best of all, the pie doesn't need to be baked, boiled, or heated. A few hours in the fridge and you're good to go!

You make this recipe 1 cake of about 22 centimeters.



Ingredients:

  • 1 roll (300 gr) Maria biscuits
  • 1 level tbsp cocoa powder
  • 2 tbsp Licor 43
  • 80 gr butter
  • 1 bucket (800 gr) Boer'nyoghurt Licor 43
  • 10 sheets of gelatin OR 20 g of powdered gelatin
  • fresh fruit, for example 1 banana, 1 pc. persimmons and red berries
  • the juice of ½ lime
  • 2 tbsp powdered sugar

Preparation no-bake yogurt cake:

Place the gelatine leaves in plenty of cold water. Then start making the crumble base. To do this, finely grind the milkshakes in a food processor. Put them in a bowl and then mix them with the cocoa powder and the Licor 43.

Then melt the butter and mix it with the biscuit crumbs as well.

Then line a cake tin (22cm) with baking paper. Spoon the crumb mixture into the tart pan and flatten well with the back of a spoon to make the bottom of the tart. Put the cake pan in the fridge for now.

Then continue making the filling: Boil 50 ml of water and put it in a pitcher. Squeeze out the gelatine leaves and place them one by one in the hot water. Stir well until the gelatin has dissolved.



Now mix the bucket of Boer'nyogurt with the gelatin mixture. Beat the mixture briefly with a whisk and then pour it onto the pie crust.

Return the cake pan to the refrigerator. The cake has set within a few (2-3) hours. If the yogurt is cold to start with, it will set faster.

Meanwhile cut the fruit and mix it with the lime juice and icing sugar. When the cake has set, spread the fruit over the top of the cake. Enjoy your dinner!
