Pumpkin gnocchi with sage butter
Gnocchi are usually made from potatoes… but did you know you can also make them from pumpkin? These pumpkin gnocchi not only look pretty, they taste delicious too! And the recipe is super easy.
You can eat the pumpkin gnocchi with tomato sauce, pesto or -like me- with a homemade sage butter. That is also very easy to make yourself with this recipe.
This recipe is for 4 servings
Ingredients:
- 1/2 round pumpkin (approx. 500 gr)
- 350 g flour (more or less depending on the moisture of the pumpkin)
- 1 egg
- Salt to taste
For the sauce:
- 50 gr butter
- 3 sage leaves
- 1 clove of garlic, pressed
- salt and pepper to taste
- 50 gr grated Parmesan cheese
- juice of ½ lemon
How to prepare pumpkin gnocchi:
Cut the pumpkin into cubes and boil them for about 5 minutes in lightly salted water. Drain the water and puree the pumpkin.
Place the pumpkin puree in a large bowl and add the egg. Add the flour a little at a time, until you have a soft, slightly sticky dough. Be careful not to add too much flour, otherwise the gnocchi will be heavy.
Dust your work surface with some flour. Then roll the dough into balls of about 2 cm. You can shape the gnocchi by gently pressing them with a fork, which will give them a ribbed pattern, but this is optional.
Cooking:
Bring a large pot of salted water to a boil. Boil the gnocchi then into the water. As soon as they float to the top (after about 4-5 minutes), they are done. Remove them with a slotted spoon and let them drain briefly.
Sage butter:
In the meantime, melt some butter in a frying pan and add the sage leaves and garlic. Let the butter brown slightly, but do not burn. Add the cooked gnocchi to the pan and fry briefly until they get a golden brown crust. Then squeeze half a lemon over them. Serve the gnocchi immediately, with grated Parmesan cheese and black pepper on top.
