Pretzel sliders with omelette
Whenever I've been to Germany I go home with a good load of pretzels or brezels. You can find them there at any bakery. Pretzels are soft, white buns that are cooked first. This gives them a beautiful shiny layer (with some tasty, coarse salt grains on top!) and a special taste.
It is actually strange that the pretzels in the Netherlands are so difficult to find. Pretzels or brezels are normally made in the form of a large pretzel. This way you have extra crusts. Tasty, but also a bit tricky – because then you can't put anything on it as a topping.
That's why there are 'pretzel rolls'. Sandwiches that are cooked and baked in the same way as traditional pretzels, but just round. Tasty and convenient!

Pretzel or sandwich healthy
We made these pretzel sliders as healthy as a real sandwich: with tomato, cheese, ham and omelette. By the way, that omelette is made 'the French way'… very quickly! You beat the eggs and fry them in very thin layers for a minute or so.
Feel free to choose different toppings for the pretzel rolls. They are delicious with almost anything (even sweet things like jam!).
You can make about 10 pretzel sliders with this recipe
Ingredients
For the bread rolls
- 350 ml lukewarm water
- 1 bag (7 g) dried yeast
- 30 gr butter, at room temperature
- 1 tsp salt
- 1 tbsp sugar
- 450 – 500 gr wheat flour
- 1 egg yolk, to brush
- Coarse sea salt, for sprinkling
For the water bath
- 2 tbsp baking soda, for in the water
- 2 liters of water
Before the siege
- 2 tomatoes, sliced
- ½ cucumber, sliced
- 10 slices of ham
- Slices of cheese
- 8 eggs
- 2 tablespoon milk
- 1 tsp salt
- A bunch of chives, finely chopped
- Olive oil, for frying

Preparation pretzel sliders with omelette
Mix the water with the yeast and let it sit together for a minute. Melt the butter over low heat and mix in the salt and sugar. Then mix the melted butter with the water.
Now add the flour and knead into a smooth dough. Is the dough too sticky? Then add some more flour. Is it too stiff? Then you can add some extra water.
Knead the dough for about 5 minutes, until it is smooth. Then place in a large bowl and cover with plastic wrap. Let the dough rise in a warm place for at least an hour.
After an hour, knead the dough again. Then divide it into 10 equal pieces and roll them into balls. Then let it rise for another 30 minutes on a baking tray lined with baking paper.
Meanwhile, heat the 2 liters of water until it boils. Add the baking soda to this. Now slide 2-3 balls of dough into the pan at a time and cook them in the soda water for about 30 seconds. Then place them back on the baking tray and preheat the oven to 200 degrees.
Use a sharp knife to make an incision from left to right in the buns. Beat the egg yolk well and spread it over the top of the pretzel rolls. Finally sprinkle them with sea salt and bake them for about 20 minutes until golden brown. Meanwhile you can make the omelettes.
Beat the eggs together with the milk and salt in a large bowl. Also add the chopped chives.
Heat a little bit of olive oil in a hot frying pan and add one tablespoon of the beaten eggs. You should now have a very thin layer of egg, much like a pancake.
When the omelet is almost set, fold the edges inwards so that you get a square/rectangle about the size of the pretzel sliders.
When the bread rolls are done baking, cut them in half and top them with ham, cheese, tomato, cucumber and an omelette. A little mayonnaise or ketchup for the enthusiast enne… enjoy your meal!
