Sopi di galiña (alternative spelling: galinja) is the traditional Antillean version of a well-known dish. One of the most famous dishes from almost every kitchen is chicken soup. This dish is also popular in the Antilles. It even seems to have medicinal properties against the flu and colds.

What makes the Antillean sòpi so characteristic are the large pieces of maize cob it contains. That's really part of it for us! It is best to eat the pieces of corn on the cob with your hands.

Everyone of course has their own version of this chicken soup. We make it here with the ingredients that we have encountered most often in these (family) recipes.



Sopi di galiña is really one of those dishes that most have fond memories of. And let's be honest: Grandma makes the best of course!

INGREDIENTS:

  • 350 grams of coarse soup vegetables
  • 3 corn on the cob
  • 1 kilo of chicken (drumsticks)
  • 1 onion
  • 2 garlic cloves
  • 1 Madame Jeanette pepper
  • 3 medium potatoes
  • 2 sweet potatoes
  • 1 winter carrot, in slices
  • 2 liters of chicken stock
  • sunflower oil
  • salt and pepper to taste

PREPARATION SOPI DI GALIÑA:

Remove the seeds from the hot pepper and then cut the pepper into thin strips. Cut the onion and garlic into small pieces and fry them together with the pepper in sunflower oil with a pinch of salt.

Then break the bone of the drumsticks where the meat ends. (about half) Use only the pieces with meat.

Then fry the chicken in sunflower oil until brown all over. Then cut the potatoes and sweet potatoes into cubes and cut the carrot into thick slices.



Then heat 2 liters of chicken stock (may be from a cube) in a pan and add all the ingredients. The corn on the cob can go in their entirety.

Let the soup cook for at least another hour. Then remove the chicken pieces from the soup and remove the meat from the bones. Return the meat to the pan and discard the bones. Then remove the corn cobs from the pan and cut them into 5 to 6 equal pieces. You then also put these pieces back in the soup.

Eat the soup with a tasty Antillean sandwich!
