The famous 'California roll', but extra quick and easy… as a small cake! Those are our sushi cupcakes. You can make it very easily with a baking ring in which you can press the rice to the perfect shape. Little effort, big result.

You can of course make these sushi cupcakes with the ingredients you like best. For example, instead of salmon you can use tuna, egg or tofu. You can also vary endlessly with the vegetables and spices.

When flavoring rice with a Japanese touch, I often use ready-made 'furikake'. These are bags with mixed spices, seaweed, sesame seeds and sometimes wasabi. You can find them in the toko in small, colorful bags. If you can find them, it's really worth taking them with you.



And don't you have them? Then you can of course decorate the sushi cupcakes with your own mixture of sesame, pieces of nori seaweed and spices or spices.

This recipe is for 4 small cakes, or one larger cake of about 15 cm. Do you need more or less? Then you can easily double or halve the recipe.

Ingredients:

  • 250 gr sushi rice
  • 3 tbsp rice vinegar
  • 2 tsp sugar
  • 1 tsp salt
  • 2 nori sheets, in strips
  • 2 tbsp mayonnaise
  • wasabi to taste
  • ½ cucumber, sliced
  • 1 ripe avocado, sliced
  • 400 gr raw salmon fillet
  • 1 carrot, cut into very thin strips
  • the juice of ½ lime
  • to decorate: spring onion rings, sesame seeds or Furikake

Preparation sushi cupcakes

Cook the rice according to the directions on the package. Meanwhile, mix the vinegar, sugar and salt and heat until the sugar dissolves. Add this to the rice when it is just cooked and stir briefly. Then let the rice cool to room temperature.



Meanwhile, mix the mayonnaise with wasabi to taste.

Then cut the salmon fillet into very thin slices and sprinkle with some lime. You can also drizzle a drizzle of Japanese soy sauce over the salmon fillet if you like.

Cut the vegetables and the avocado into slices. After this you can put together the sushi cupcakes.

Take a baking ring and scoop 2 tablespoons of cooked rice into it. Press the rice well and spread some mayonnaise on it. Then put a layer of avocado on it. Now another layer of rice, some mayonnaise, a layer of salmon fillet and another layer of rice.



Decorate the top of the sushi cupcakes with some mayonnaise, cucumber, carrot, salmon fillet and Furikake or sesame seeds. A strip of nori (seaweed) as a 'band' around the cupcake makes it complete. Enjoy your dinner!
