Vegan banana cupcakes
Delicious banana cupcakes decorated with coconut cream and a monkey head from Katya. Because did you know that these days they are also completely vegan?
There is no getting around it: more and more plant-based foods are being eaten. And that's a great development! Because why would you still use animal products if you don't have to? Nowadays you will find a vegetable variant for almost all 'standard' products. And as far as recipes are concerned, there are more and more plant-based variations.
Sometimes I try such a vegan recipe and then I think… “No, never mind”. It doesn't come close to the original. But in this case it is different: these vegan banana cupcakes are so delicious that I now prefer to make them this way rather than with eggs and butter.
Not only are they healthier this way (because less fat), but they are so extremely light that I actually don't understand why eggs were ever included in the recipe. Just watch the video and you'll see how fluffy and soft these cupcakes are!
This recipe makes 12 cupcakes.
Ingredients:
- 2 (over)ripe bananas
- 50 ml sunflower oil*
*or use peanut, soy or corn oil - 2 tbsp dark brown caster sugar
- 3 tbsp granulated sugar
- 175 gr wheat flour
- 8 gr (½ sachet) baking powder
- A pinch of salt
To decorate:
- 250 ml vegan whipped cream*
e.g. based on coconut or soy - 2 tbsp powdered sugar
- 12 monkey heads (Katja)

Preparation vegan banana cupcakes
Peel the bananas and mash them in a large bowl. Then add the oil, brown sugar and granulated sugar and mix well.
Sift the flour over the bowl and add the baking powder and salt. Stir it all to a smooth batter. Meanwhile, preheat the oven to 170°C.
Then grease a cupcake tin with baking spray or use cupcake papers to line it. Then divide the batter among the 12 moulds.
Bake the vegan banana cupcakes for 18-20 minutes until golden and golden, or until a skewer comes out clean. Then let them cool well on a rack.
Meanwhile, whip the vegan whipping cream with the powdered sugar until stiff. Pipe a dollop of cream on each cupcake and finish the cupcakes with a monkey head. Enjoy your dinner!
