Awa di Lamunchi

Awa di lamunchi is syrup of lime from Curaçao. It is a nice refreshing drink that is super quick to make. You can put this Antillean 'limeade' on the table within fifteen minutes!

In the Antilles we drink this sweet drink when it is really hot. Just before the rainy season, temperatures can sometimes reach 40 degrees. In such a case, a glass of awa di lamunchi provides cooling.

All you need for this recipe are limes, sugar and water. The sugar and a small portion of the water are boiled together so that the sugar crystals dissolve. Then the juice of the limes is added. Finally, the thick syrup is diluted with water to taste. A child can do the laundry!



Tip: to reduce the calories, you can also sweeten the drink with stevia.

Ingredients:

  • 3 limes, juice + zest
  • 100 gr granulated sugar
  • 1 Liter of water

Preparation awa di lamunchi

Peel the limes with a vegetable peeler. Then boil the sugar with 100ml of water and the lime peels.

Let it simmer for a few minutes until it turns green.



Then let the syrup cool to room temperature.

Squeeze the (peeled) limes and mix the juice with the syrup you just boiled.

Now add the rest of the water and serve the awa di lamunchi with ice cubes – enjoy your drink!
