Grilled pineapple with Caribbean Baking Spice

One of the easiest desserts you can make (10 minutes from start to finish!), but with surprisingly much flavor. Gently frying the pineapple in butter and brown sugar creates a delicious caramel sauce. The Caribbean Baking Spice provides the 'flavor'.

For enthusiasts: the chili threads add a subtle spicy accent. You can buy them at various (online) spice shops. I'm a real fan!

By the way, if you're still hungry: the pineapple is even tastier with a scoop of vanilla ice cream!

Ingredients (4 p.)

  • 1 fresh pineapple
  • 50 gr butter
  • 3 tbsp dark brown caster sugar
  • 1 tl Caribbean Baking Spice
  • 1 tbsp lime juice
  • Pinch of salt
  • Threaded chili peppers, for garnish

Preparation

Peel the pineapple, remove the hard core, and cut the flesh into slices or wedges.

Melt the butter in a large frying pan over medium heat. Add the brown sugar, salt, and lime juice and stir until the sugar has dissolved.

Place the pineapple in the pan and fry for 3 minutes per side, until the pineapple turns a beautiful golden brown and is covered with a glossy caramel sauce.

Sprinkle the pineapple with the Caribbean Baking Spice and gently toss for another minute so that the spices mix well with the sauce.

Divide the pineapple among the plates, spoon the sauce from the pan over it, and garnish with chili threads.

Tips / comments

Delicious with a scoop of vanilla or coconut ice cream.

Also delicious with coarsely chopped, roasted pecans or pistachios.

Preferably use a ripe, fresh pineapple; it caramelizes the best.
