This dish is the perfect side dish for a barbecue, picnic or brunch. Because you can cut the macaroni pie into pieces after baking, it looks super nice and it's handy to take with you.

This recipe makes a macaroni pie of about 20 cm in diameter. That's enough for about 6 servings.

Ingredients:

  • 250 g macaroni
  • 250 gr chicken fillet
  • 2 the Curacao Hot Chicken spice mix
  • 2 tbsp sunflower oil
  • 1 red pepper, diced
  • 1 onion, chopped
  • optional: ½ Madame Jeanette pepper, finely chopped
  • 75 gr cubes of ham
  • 200 gr grated (matured) cheese
  • 4 eggs, beaten
  • Extra grated cheese, for sprinkling

Preparation macaroni pie

Cook the macaroni according to the package. You get the best result when you cook the macaroni for one minute less than usual. After cooking, rinse the macaroni with cold water and set aside.

Now cut the chicken fillet into cubes and season them with the Curaçao Hot Chicken mix (or a spicy spice mix of your choice). Chop the bell pepper, onion, and optionally the hot pepper finely.

Then heat the oil in a frying pan and fry the chicken breast, bell pepper, onion and pepper until the chicken is almost done. Then add the ham cubes and turn off the heat.

Take a large bowl and beat the eggs with the grated cheese in it. Then add the macaroni and also the mixture of chicken and peppers. When all the ingredients are in the bowl, mix them well.

Now preheat the oven to 175°C.

Grease a 20 cm baking tin (with butter or baking spray) and pour the macaroni mixture into it. Press the macaroni pie well and sprinkle an extra layer of cheese on top.

Bake the macaroni pie for about 50 minutes until it is done and golden - bon appetit!
