Spicy beef bread rolls with curry

You can already fill these delicious beef bread rollss before baking. Spicy minced curry in a slightly sweet bun… irresistibly delicious! And they are super handy to take with you when you go somewhere, because the filling can't fall out.

We really make these bread rolls 'from scratch', so all ourselves. The result is tasty, soft bread rolls filled with a tasty minced meat filling. As decoration I chose white and black sesame seeds for these buns. You can of course also use poppy seeds or sunflower seeds, whichever you prefer.

This recipe makes about 12 beef bread rollss.



Ingredients:

For the dough

  • 500 gr wheat flour
  • 1 bag (7 gr) instant yeast
  • 1 teaspoon salt
  • 2 tablespoons of sugar
  • 50 ml of whole milk
  • 30 ml sunflower oil
  • 200 ml lukewarm water

For the filling

  • 500 gr minced beef
  • a handful of raisins
  • 2 carrots, grated
  • 1 onion, chopped
  • 1/2 Madame Jeanette pepper
    (or 1 tsp ground cayenne pepper)
  • 2 teaspoons curry powder
  • 1 teaspoon salt
  • 1 / 2 teaspoon black pepper
  • 1/2 teaspoon of cumin (powder)
  • 2 tablespoons oil, for frying
  • 3 tablespoons breadcrumbs
  • 1 egg yolk
  • sesame seeds

Preparation of spicy beef bread rolls

Start making the dough. To do this, first mix the flour with the sugar and salt. Then mix the yeast with the milk. Wait a while until the yeast mixture starts to foam.

Now add all ingredients together in a bowl and knead into a smooth dough. With a machine this takes about 5 minutes and by hand it takes about 15 minutes.



Then cover the bowl with plastic wrap and let the dough rise in a warm place for an hour, until it has doubled in size.

Meanwhile, make the filling for the beef bread rolls: for this, heat the oil over medium heat and fry the onion with the salt for a few minutes until translucent. Also add the hot pepper and grated carrot. (Always hot pepper to taste!)

I like to grate the carrot coarsely, so that you can still recognize the pieces later. Fry this together for about 2 minutes and then add the minced meat.

Now add all the other ingredients, except the breadcrumbs. Then brown the meat. This takes about 10 minutes.



The raisins should already absorb some of the moisture from the filling. Is the filling still too moist? Then add the breadcrumbs and stir well again.

Filling the beef bread rolls

Divide the dough into 12 pieces and roll out each piece into a circle of about 12 centimeters. The inner part of the dough circle may be thicker than the edges!

Now fill the dough with 2 tablespoons of the filling and join the edges together, until the filling is 'trapped'. Roll the dough into a nice ball and place it seam side down on a baking tray lined with baking paper. Continue until all the balls are filled and you have made 12 beef bread rollss.

Then let the bread rise for another hour.

Now preheat the oven to 200 degrees. Then beat the egg yolk and lightly brush the bread rolls with it. Finally, sprinkle some sesame seeds over the beef bread rolls and bake them for 12-15 minutes until done and golden brown.
