Scrambled eggs and avocado is one of those combinations that never gets old. On toast, as a side dish, as a salad… or, as here, on a wrap.

We like to have breakfast at Cofeelicious in Dordrecht on Sunday. In addition to the best coffee, they also serve great avocado toast. So with scrambled eggs. Now that it's a bit more difficult to just have breakfast or lunch somewhere, we have to take care of it ourselves. Our version goes on a wrap. Just as tasty and it looks nice too!

What is scrambled eggs?

Scrambled eggs are super simple to make, but you do have to think carefully: unlike with scrambled eggs, the egg should not set completely. It is supposed to be about 90 degrees, so that it binds, but does not separate from the liquid (the whipped cream) that goes into the recipe.

It is therefore a matter of removing the scrambled eggs from the pan in time, otherwise you will end up with scrambled eggs. Tasty too, but maybe another time.

This recipe makes 2 wraps. Are you with more people? Then you can easily double the recipe.

Ingredients:

  • 4 eggs
  • 50 ml whipping cream (unwhipped)
  • a pinch of salt
  • 1/2 tsp black pepper
  • 2 spring onions, in rings
  • 1 tbsp (olive) oil
  • 2 avocados
  • the juice of 1/2 lime
  • a sprig of cilantro
  • 2 tortilla wraps

Preparation of scrambled eggs & avocado wraps

Start by heating the wraps. You can heat these in a dry pan for about 3 minutes, until they color slightly. Then set them aside.

Slice the avocados and sprinkle with some salt. Then sprinkle the slices with some lime juice.

Now we move on to making the scrambled eggs. To do this, break the eggs into a bowl and mix in the whipped cream. Good tinkering! Now add a pinch of salt, 1/2 tsp black pepper and the spring onion rings.

Heat some oil in a pan. It is important that the pan remains on low heat!

Now put the egg mixture in the pan and wait about 20 seconds. Always scoop the mixture towards the center with a spatula. At some point you will see the eggs become firm, but not dry. A bit like custard.

Now turn off the fire and carefully stir the whole thing again with the spatula.

Top the tortillas with half of the scrambled eggs and the avocado. Sprinkle everything with some chopped coriander.

Finally, close the wraps with a toothpick. Enjoy your dinner!
