Vegan spring rolls – fried or from the oven!

Spring rolls are tasty, versatile and you can easily make a lot of them. Traditional spring rolls usually have chicken or shrimp, but today we make them completely plant-based. You can prepare these vegan spring rolls in the deep fryer or in the oven. Just what you like best.

What is a spring roll?

Spring rolls are small, rolled-up packages of dough with a filling. You have versions (like this one) that are deep fried and you have rice paper versions that are no longer boiled or baked after cooking. I always thought the word 'spring roll' came from Malay, but according to Wikipedia it is of Chinese origin.

In Minnan dialect, the dish was called 'lun pia', which means something like 'soft pancake'. In China, spring rolls are often eaten around (Chinese) New Year, which falls in the spring. That is why spring rolls are also called 'Spring Rolls' in English.



Vegan dough for spring rolls

Spring roll wrappers that you find in the supermarket or toko's usually contain some milk protein. This makes them vegetarian, but not vegan. Do you really eat plant-based yourself? Then you can make the spring rolls with phyllo dough. Most variants of filo pastry do not contain any animal ingredients. Of course it is still best to read the packaging carefully, so that this is really the case with your dough. If you don't necessarily eat plant-based, it's easiest to make the spring rolls with 'regular' spring roll wrappers.

This recipe is for 4-6 people

Ingredients:

  • 10 strips of filo dough*
  • 75 gr rice noodles or noodles
  • 1 onion, in fine rings
  • 2 cloves garlic, crushed
  • 5 cm ginger root, grated
  • 1 chili pepper, in rings
  • 175 gr (1 tray) 'chicken pieces' / vegan meat substitute
  • 1 tbsp sesame oil
  • 200 g white cabbage, finely chopped
  • 100 gr winter carrot, in very thin strips
  • 1 tbsp soy sauce
  • 2 tsp sambal oelek
  • the juice of ½ lime
  • salt and pepper to taste
  • (optional) oil, for frying

*Some brands of filo pastry sell their product in smaller slices. You can use these in their entirety. Do you use phyllo dough on a roll (usually from a Turkish brand)? First cut it into rectangles of about 15×30 cm.

Preparation vegan spring rolls

Cook the rice noodles or noodles according to the instructions on the package and rinse the noodles under cold, running water. Then drain them and cut or cut them into short pieces.



Then cut the chicken pieces (or other meat substitute) into dice. Then heat the sesame oil in a wok or frying pan and fry the onion and garlic until the onion is translucent. Add the ginger, the chili pepper and the chicken pieces and fry for about 5 minutes, until the chicken pieces are cooked.

Then add the white cabbage and carrot to the pan and fry for another 3 minutes, until they are bendable. Then remove the pan from the heat and add the rice noodles, soy sauce, sambal and lime juice. Season the filling with salt and pepper to taste. Mix everything well and let it cool to room temperature.

Make sure your filo pastry or spring roll sheets are defrosted in the meantime. Now put a strip of the dough on your work surface and scoop two tablespoons of filling into it, in a horizontal line. Then fold the dough in half and then fold an edge over so that the filling stays in it. Then roll up the spring rolls and seal the end with a little bit of water.

Place each spring roll, fold down, on a baking tray lined with baking paper. To bake the spring rolls you can now either heat a frying pan with oil to 170°C, or preheat the oven to 180°C.



Frying: fry the spring rolls in small portions in about 5-7 minutes until golden and golden
Oven: grease the spring rolls with a little bit of oil and place them in the hot oven. Bake them until done and golden in about 25-30 minutes.

Serve the spring rolls hot with your favorite dipping sauce… Enjoy your meal!
