Caribbean jerk chicken pizza

We love pizza at home… and preferably in flavors that you can't order at every pizzeria. My absolute favorite? That's this jerk chicken pizza! With spicy seasoned chicken breast and homemade barbecue sauce. You just can't eat your fingers.

Jerk chicken is a Jamaican way of preparing chicken. Preferably, the chicken goes on the barbecue after marinating, but if that is not the case, it can also be grilled or even fried in a pan. The secret of a good jerk chicken is of course in that special marinade. By the way, you can make it as hot as you want.

Normally a whole ground Scotch Bonnet (or Adjuma) pepper goes in, but you can also choose to use half, a quarter or even a very small piece. Just what you like best. When our children eat with me, I usually use half an Adjuma pepper.



You can make 4 large or 6 small pizzas from this recipe… but always with a thin base!

Ingredients:

For the sauce

  • 50 gr brown caster sugar
  • 3 el water
  • 50 ml tomato ketchup
  • 140 gr (2 small cans) tomato paste
  • ½ onion, chopped
  • 1 clove of garlic, pressed
  • 2 tbsp white wine vinegar
  • ½ tl of salt
  • ½ tsp chili flakes
  • a pinch of ground cloves
  • ½ tsp thyme needles
  • black pepper to taste

For the jerk chicken

  • 2 chicken breasts
  • 2 shallots, chopped
  • 4 cloves of garlic, chopped
  • ginger, chopped about 5 by 5 centimeters
  • a sprig of fresh thyme, chopped
  • 1 tsp allspice powder (allspice)
  • 1 tsp cinnamon
  • 2 tsp freshly ground black pepper
  • 1 tsp nutmeg
  • 1 Madame Jeanette pepper
  • 2 tbsp brown sugar
  • 5 tbsp dark soy sauce / sweet soy sauce
  • 3 tbsp olive oil
  • the juice of 2 lemons

For the pizza dough

  • 500 gr wheat flour
  • 11 g (1 bag) of dried yeast
  • 10 g salt
  • 275-300 ml of lukewarm water
  • 2 tbsp olive oil

And further…

  • a red onion, in rings
  • 1 red bell pepper, in strips
  • 1 yellow bell pepper, in strips
  • 250 grated mozzarella
  • 100 gr grated Parmesan cheese
  • optional: bacon slices

Preparation Jerk Chicken Pizza

Making sauce and chicken

Start making the sauce. To do this, mix all the ingredients from the first list in a pan and heat it until the sauce boils. Let the sauce simmer for about 10 minutes until all the flavors are well combined. Then set the sauce aside until it's time to assemble the Jerk Chicken Pizza.

Now it's time to make the Jerk marinade. To do this, mix all the ingredients for the Jerk Chicken (except the chicken) into a thick sauce. This can be done, for example, in a food processor or with an immersion blender. Place the chicken breast in the marinade and rub the marinade in well. Leave the chicken in the fridge until you are ready to make the pizza.

Now move on to making the pizza dough. To do this, mix all the ingredients for the dough and knead it well until a smooth dough is formed. With a machine this takes about 5 minutes and by hand about XNUMX minutes. The dough is ready when you can stretch it into a ball until it is almost translucent.



Then place the dough in a bowl and cover it with plastic wrap as well. Then let the dough rise in a warm place for an hour, until it has doubled in volume.

After the hour, flatten the dough and knead it again briefly. Now let it rise for another 20 minutes while you continue to prepare the other ingredients.

Grill the chicken breasts (or fry them in a frying pan with some oil) for about 10 minutes. Let the chicken cool for a while and then cut the fillets into thin slices. Meanwhile, preheat the oven to 210°C,

Divide the pizza dough into 6 pieces and roll them out into pizzas. Put some of the sauce on each pizza and then spread some cheese over it. Top the pizza with the red onion, bell pepper and chicken strips. You can now also spread some bacon over it.



Bake the pizzas for 10-12 minutes until golden and cooked through. Cut them into wedges and serve the Jerk Chicken pizza hot. Enjoy your dinner!
