Zabaglione with orange and strawberries
A zabaglione (or in French 'sabayon') is a delicious dessert made from egg yolks. The traditional version goes for marsala or white wine, but this time I'm keeping it alcohol-free… with orange juice!
The zabaglione has a nice and soft and creamy taste. Perfect in combination with the strawberries in fresh sour syrup. And the best? With a little skill you can put this dessert on the table within half an hour.
You can make 4 servings of zabaglione from this recipe
Ingredients:
- 500 g strawberries, sliced
- the juice of 1 lime
- 2 tbsp granulated sugar
- 6 egg yolks
- the juice of 1 (large) orange
- 1 packet of vanilla-flavored sugar
- 6 tbsp granulated sugar

Preparation zabaglione with strawberries
Cut the strawberries into slices and sprinkle them with the lime juice. Add 2 tbsp granulated sugar to the strawberries and mix well. Let them stand for fifteen minutes. The sugar extracts water from the strawberries and you get a nice syrup.
Meanwhile, make the zabaglione. To do this, take 6 egg yolks and mix them with 6 tbsp granulated sugar and a sachet of vanilla sugar. Beat the egg yolks well with a whisk. Then add the orange juice.
Now heat a small pan with water until the water boils. Place the bowl with the zabaglione on it and beat the egg yolks in this way 'au Bain Marie', until they start to set. This happens at about 85°C, so you have to be patient for it.
When the zabaglione has become thick, it is time to finish the glasses. Take 4 wine glasses and scoop some of the strawberries in syrup into them. Then a good layer of zabaglione and possibly some pieces of dark chocolate. Finish the glasses with one of the strawberry slices. Enjoy your dinner!
