De Pineapple upside down cake' is a traditional cake that you bake upside down. This makes it one of my favorite cakes… when you need a nice cake quickly, it's the perfect option. After baking, it does not have to cool down first to be decorated. He already has that decoration of his own!

And what a picture it is, huh? With those bright red cherries and the shiny, yellow pineapple, it will brighten up any party. You can make the cake in no time at all (10 minutes preparation time) and after about 45 minutes in the oven it is completely ready.

In the Antilles we also call this pineapple upside down cake 'bolo di anasa'. So pineapple cake, but in Papiamentu! Will you be making it yourself soon?

This recipe is for one cake of about 24 centimeters in diameter.

Ingredients:

  • 100 gr butter, unsalted
  • 100 gr granulated sugar
  • 1 can (400 gr) pineapple slices
  • 10 glacee cherries, halved

For the cake:

  • 4 eggs
  • 350 gr self-raising flour
  • 1 tl baking powder
  • a pinch of salt
  • 300 gr granulated sugar
  • 300 gr butter, unsalted & at room temperature
  • 1 tsp almond essence

Preparation of the pineapple upside down cake:

Preheat the oven to 170 degrees and grease a baking pan with butter.

Melt 100 grams of butter over low heat in a small saucepan. Then pour the melted butter over the bottom of a baking tin (24 cm). Then sprinkle 100 grams of sugar over it. This together makes the shiny layer that comes on the pineapple upside down cake. Then divide the pineapple slices over the sugar layer and place the cherries halves (upside down) in the middle of the slices. 



Then take a large bowl and beat 300 grams of butter with 300 grams of granulated sugar in it until it is airy. Now add the eggs and almond essence and continue beating until you get a light, homogeneous mixture. Now add the self-raising flour, salt and baking powder to the butter mixture.

Then mix well to get a uniform batter. Note: you should never beat a cake with butter too enthusiastically. Then the cake can collapse after baking. Do not use an electric mixer!

After mixing, carefully pour the batter over the pineapple slices and place the baking tin in the preheated oven. Then bake for 45-50 minutes (or until a skewer comes out clean) and then remove from the oven.

Let the pineapple upside down cake cool for 10 minutes and cut the edges with a blunt knife. Finally, turn the bolo di anasa over and remove the baking pan. - Enjoy your dinner!
